Delicious Puddings for Kids - A Winner Every Time

Delicious puddings for kids
I have in my possession, 2 little exercise books, belonging to my dear departed Mother in law Faye. She was taken from us far too early, at just 50 years old. How nice to share these recipes with her great grandchildren, who loved them and would have loved her
Very simple, and a bit hit or miss but I did nail them… and here they are in their glory.
Interestingly the small amount of butter and sugar didn't exactly cream,  but it was well mixed
I find that popping the bowl for 20 seconds in the microwave, containing both the Sugar and butter, makes the creaming much easier.
Don’t melt the butter, just soften
Also, folding the egg whites into the very runny batter, was interesting.
Seemed a bit lumpy but when cooked was just fine
So here we go
Lemon Delicious Pudding
 They wolfed it down. Should feed 4 people, but the 3 of them had second helpings and here is the result. Only slim pickings for Grandma...

 
Nana Faye's recipe
Pre-Heat oven to 170C
Grease a baking dish
1/2 cup sugar 
1 tablespoon butter room temperature 
2 tablespoons flour sifted 
Pinch salt 
Juice and rind if 1 lemon I made sure there was at least 1/4 cup of lemon juice 
1 cup milk 
 2 eggs separated 
Cream butter and sugar
Add beaten egg yolks
Fold in flour and salt 
Then lemon juice and zest
Add milk 
Mix well
Just before pouring into greased baking dish,
Fold in stiffly beaten  eggs whites
Bake in Bain Marie
( large baking tin with cold water poured halfway up the dish)

Serve with Ice cream or whipped cream

Chocolate Self Saucing Pudding 
Pre-Heat oven to 170C 

60 gms butter 
1/2 cup sugar 
1 egg 
1 cup flour 
1 tsp BP 
1 tablespoon cocoa 
Pinch salt 
1/2 cup milk 


Extra for topping
1/2 cup sugar 
2 teaspoons cocoa 
2 full cups boiling water

Cream butter and sugar 
Add egg
Beat well
Sift together flour,baking powder, cocoa and salt
< and fold in.
Then add milk
Mix well
Place into greased baking dish
Sprinkle with extra sugar and cocoa mix
Pour the hot water over the batter
Cover and bake 1/2 hour Remove cover, then bake for another 20 minutes
Sponge will rise to the top with a lovely chocolate bubbling sauce underneath
Just lightly press the sponge it should spring back and then it's done
