Fresh Flounder - What a Meal

Stunning.
We have been given more fresh flounder. Thank you Garry and Sandra.
And excellent cleaning too Ms Sandra.
As this is still a novelty for us on this trip. The only way to cook it is in some olive oil and butter.
First dip the flounder in well seasoned flour
Dust off the excess
Into a hot pan with some olive oil
Cook for about 2-3 minutes until golden brown
Flip add a knob of butter
Another 2-3 minutes is all you need
Baste a couple of times.
Onto the plates
Good squeeze lemon juice and another grind black pepper
Just get into it... don’t forget to suck the bones, they are so succulent and tasty.
I roasted some cubed potatoes and onions with a little olive oil
Sea salt and black pepper. And for good taste a couple sprigs of rosemary.
Food fit for a king.
