    All Year Round Salad - Dairy Free - Gluten Free

    My daughter, has just had to spend 36 hours in hospital, in Isolation
    She is currently on a dairy free, wheat free diary to sort out some allergy problems

    The hospital food which is actually satisfactory, for normal diets
    Didn't work well for her
    So, Meals on wheels went into action
    Even did the delivery, via the bus, en route to lunch
    All on the taxpayer
    Oh the taxpayer didn't pay for the food, so a bonus for the taxpayer ha ha
    I made 2 different salads
    First
    Originally using what I had in the fridge
    I devised a salad which I would repeat again and again
    The sweetness of the melon with the peppery flavour of the salami
    A match must have been made in heaven methinks
    So so popular with the patient

    This is the amounts I used for 1 patient
    1 med Grated carrot
    1/2 Red pepper chopped
    1/2 yellow pepper chopped
    The green part of the spring onion
    1/4 peeled and chopped rock melon
    4 slices of. Pepperoni salami  sliced
    2-3 tabs French dressing

    Throw all these ingredients into a container
    Toss well


    1/2 cup lightly toasted and salted cashews
    Add the cashews on the top
    Mix them in just before eating to keep them crisp

    And then a simple Potato Salad
    1 large potato peeled, chopped and cooked in boiling salted water till just tender
    1 tbs French dressing
    2 hard boiled eggs
    Peeled and chopped roughly
    2 gherkins
    1 spring onion chopped
    2 tbs Mayonnaise


    When the potatoes are cooked
    Drain, toss with the French dressing
    Cool

    Put the Mayo in a bowl
    Add the gherkins, spring onions and egg
    Toss around lightly

    When the potatoes are cool, add to the bowl
    Mix well gently
    Taste, add salt and pepper if needed

    Perfect Raspberry Sorbet - So Simple

    Raspberry or Strawberry Sorbet

    I saw this simple Sorbet, on an Australian Cooking Programme, with Justine Schofield
    She was a MasterChef Finalist, in Series One
    She actually made this with frozen Raspberries, or you could use fresh in season

    So so simple
    I just had to make it
    After a wonderful celebration lunch, that we held at home last week.
    I found a couple of punnets of leftover Strawberries, in the bottom of my fridge.
    Just to the point of going off.
    Oops
    One bonus of that, is, they were really sweet
    What a great way to use them up, perfect for the kids dinner tonight.
    So I made Sorbet
    No need for ice cream machine
    Just a food processor or blender and a freezer

    100 gms caster sugar
    100 mls water
    2-3 drops lemon juice

    Dissolve over med heat
    Bring to slow simmer and
    Bubble away for about 5 minutes
    Just to reduce a little
    Cool

    600 gms raspberries/strawberries

    If using strawberries remove stalks

    Pop into food processor
    Blitz till fine purée
    Strain through a sieve into a bowl
    To get out the seeds
    Add sugar syrup
    Back into food processor
    Blitz again till smooth
    In to a tray and freeze

    Remove from freezer
    Break up and back into food processor

    Separate out 1 egg white
    Start processor and add egg white to raspberry ice
    straight away
    Blitz till smooth

    This took about 2-3 minutes
    Every so often scrape down the sides till homogenised

    Into plastic container with lid
    Refreeze then it’s ready to eat

    Going to serve it with Little tarts, filled with Chocolate Ganache

    Corn Muffins - Dealing with Wheat and Dairy Free

    Thought I would make some corn muffins. I wanted to trial them for Thursday to accompany the Soup Lunch for the Juice Staff.
    They look and taste just fine. I used spelt flour and rice milk. Don't forget we are talking wheat free not gluten free.
    Added some chili and sauteed onion. I think I will add some frozen corn, a larger onion and some coriander, when I make them on Thursday, for a bit of extra flavour.
    They would be great with some feta crumbled in I reckon... but there ya go.

    1 cup cornmeal
    1 cup spelt flour
    1/3 cup white sugar
    2 teaspoons baking powder
    1/2 teaspoon salt
    1 egg, beaten
    1/4 cup rice bran oil

    1 small onion finely chopped
    1 red chili finely chopped
    1 cup vanilla rice milk


    Directions

    Preheat oven to 400 degrees F (200 degrees C).
    Grease muffin pan or line with paper muffin liners.
    Take a tablespoon of the oil and gently saute the onions and chili, till just soft
    In a large bowl, mix together corn meal, flour, sugar, baking powder and salt.
    Add egg, oil onion, chili and milk;
    Stir gently to combine.

    Spoon batter into prepared muffin cups.

    Bake for 15 to 20 minutes, (18 minutes did it for me)
    or until a toothpick inserted into a muffin comes out clean.
    So far so good
    Warm and inviting, an excellent crumb, light and very good.
    A blob of melted butter, dripping off it would be very nice!

    Let's Go Eat Italian

    The camera took this shot by mistake. I love the colour of the tomatoes signs of Summer…Hooray.

    We were losing a valued member of staff Kerry.
    He is going on to better things and we wish him well, but will miss him.
    So a farewell lunch for Kerry was planned. I hadn’t made a staff lunch for ages…it was long overdue.
    Of course we still have a couple of people to take into consideration when planning lunch. There is a dairy problem.
    So I made 2 pasta dishes. One containing heaps of dairy and the other none.

    Mrs. Ina Garten was the inspiration for this one and it was fabulous

    Lemon and Broccoli Cream Pasta
    1 tablespoon good olive oil
    1 tablespoon minced garlic (2 cloves)
    2 cups heavy cream
    3 lemons
    Sea salt and freshly ground black pepper
    1 bunch broccoli
    500 gms dried Fusilli pasta
    200 gms baby arugula (or 2 bunches of common arugula, leaves cut in thirds)
    ½ cup freshly grated Parmesan
    1 punnet grape or cherry tomatoes, halved

    Directions

    Heat the olive oil in a medium saucepan over medium heat,
    Add the garlic, and cook for 60 seconds.
    Add the cream, the zest from 2 lemons, the juice of 2 lemons, 2 teaspoons of salt, and 1 teaspoon of pepper.
    Bring to a boil, then lower the heat and simmer for 15 to 20 minutes, until it starts to thicken.

    Meanwhile, cut the broccoli in florets and discard the stem.
    Cook the florets in a big pot of boiling salted water for 3 to 5 minutes, until tender but still firm.
    Drain the broccoli and run under cold water to stop the cooking.
    Set aside.
    I used the same pot and water to cook the pasta
    Bring it back to a boil, add 1 tablespoon of salt and the pasta, and
    cook according to the directions on the package, about 12 minutes,
    stirring occasionally.
    Drain the pasta in a colander and place it back into the pot.

    Immediately add the cream mixture and cook it over medium-low heat for 3 minutes, until most of the sauce has been absorbed in the pasta.
    Pour the hot pasta into a large bowl, add the arugula, Parmesan, tomatoes, and cooked broccoli.
    Cut the last lemon in half lengthwise, slice it ¼ inch thick crosswise, and
    Add it to the pasta.
    Toss well, season to taste, and serve hot.
    This was so good I repeated it last Saturday for lunch with a group of old friends.
    A wonderful lunch with wonderful friends.
    Terry and Barb (below) were in Auckland for the weekend from Wellington.
    We all lived there in the past. That’s what I mean by old friends not age, but time.

    And our dear friend Catherine (pictured being greeted by Terry) and popping up in most photos (dressed in the virginal white) the lovely Dale.
    Meanwhile we have turned our friends Pete and Elphie onto The Divine Marcella Hazan.

    So Pete made this wonderful Scallop dish for our starter.
    Unfortunately I didn’t have a photo but this is how you make it.
    Very simple.

    Sautéed Scallops and Mushrooms
    For 4 people
    500 gms firm fresh mushrooms
    ½ cup extra virgin olive oil
    2 tablespoons chopped shallots
    1 tablespoon garlic chopped
    Sea salt
    ½ cup dry white wine
    500 gms scallops
    1 teaspoon chopped dried hot pepper or 2 teaspoons of fresh hot pepper
    3 tablespoons chopped parsley


    In a large sauté pan add 5 tablespoons of oil
    Turn heat to high add shallots and cook till golden brown
    Add garlic and when that is golden
    Add mushrooms
    Turn down the heat
    Add salt and cover the pan.
    As you stir from time to time you will find that the mushrooms throw off some liquid
    After 15 minutes uncover the pan and
    Turn up the heat to medium heat to evaporate the liquid.
    Then add white wine
    Cook stirring until the wine has also evaporated and the only liquid in the pan is olive oil.

    Rinse the scallops in cold water and pat dry thoroughly
    Put them into the pan with hot freshly ground black pepper and parsley.
    Add a little m ore salt.
    Turn up the heat to high and cook for 3-4 minutes stirring frequently
    Serve piping hot.
    Great with crunchy bread.

    Our friend Catherine supplied dessert
    Once again very simple and delicious.
    She made the lemon curd but you could buy it..

    Little Filo Pastry Cases filled with Lemon Curd topped with Strawberries and Cream
    She also supplied the beautiful Whisky Chocolate Fudge.
    That is just fabulous.
    Now back to the staff lunch. Here is the non dairy dish

    Giada de Laurentis supplied this recipe. It also was stunning
    Lemon Prawn Pasta
    Ingredients

    For the lemon oil:

    ½ cup extra-virgin olive oil
    1 lemon, zested

    Combine the olive oil and the lemon zest in a small bowl and reserve.

    For the pasta:

    500 gms linguine pasta
    2 tablespoons olive oil
    2 shallots, diced
    2 garlic cloves, minced
    500 gms frozen shrimp
    ¼ cup lemon juice (about 2 lemons)
    1 lemon, zested
    1 teaspoon sea salt
    ½ teaspoon freshly ground black pepper
    100 gms arugula (about 3 packed cups)
    ¼ cup chopped fresh flat-leaf parsley


    For the pasta:

    Bring a large pot of salted water to a boil over high heat.
    Add the pasta and cook until tender but still firm to the bite, stirring occasionally, about 8 to 10 minutes.
    Drain pasta, reserving 1 cup of the cooking liquid.

    Meanwhile, in a large, heavy skillet warm the olive oil over medium heat.
    Add the shallots and garlic and cook for 2 minutes.
    Add the shrimp and cook until pink, about 5 minutes.
    Add the cooked linguine, lemon juice, lemon zest, salt, and pepper.
    Toss to combine.
    Turn off the heat and add the arugula.
    Add the reserved lemon olive oil and add the oil to the pasta.
    (You can strain out the zest but I like it to remain.)

    Add the chopped parsley to the pasta and toss to combine.

    Serve immediately.
    Some of our lot tucking in.

    Banana Cake for the Birthday Boy

    It was Glen’s birthday and my turn make his cake…
    Glen has a dairy allergy and this cake is great…no dairy at all.
    I have actually posted this cake before but I have made a couple of changes and I think they are worth noting.

    First I did make it in a round tin this time
    And I used Lindt Intense Orange Chocolate
    Don’t you love the candle. It’s all we had on hand

    Oven temperature: 160C
    Cooking time: 45 minutes - 1 hour or until skewer comes out clean
    Grease and flour a 23 cm tin
    Ingredients:
    3 Brown Banana's
    1 cup Raw Sugar
    1 cup vegetable oil (grape seed oil or rice bran)
    4 Eggs
    ¼ cup cocoa powder (lump free)
    2 ½ cups Self Raising Flour
    1 teaspoon Baking Soda
    1 x cake Lindt Intense Orange Chocolate chipped
    Reserve 2 tablespoons of chips for icing.
    Chop them even more finely

    Instructions:
    In a large bowl mash banana's.
    Add sugar and oil and mix to combine (try a masher).
    Add all eggs and combine.
    Add lump free cocoa to egg mix and combine.
    In another bowl add sifted self raising flour and baking soda
    Add chipped Chocolate to the flour mix and fluff with a fork.

    Now add flour and choclate to banana mix and fold together without over mixing
    Pour into a prepared cake tin
    Bake at 160C for 45 minutes - 1 hour or until skewer comes out clean.
    When cold turn out and ice.

    Simple Chocolate Icing
    1 cup icing sugar sifted
    1 tablespoons cocoa sifted
    1 teaspoon rice bran oil
    Hot water to mix


    In a bowl place icing sugar and cocoa
    Add chocolate chips and mix
    Add oil and then hot water till you get the consistency you need to cover cake
    Cut 3 banana slices dip them in lemon juice for decoration.
