Jimmy Buffett, Sydney Opera House- A Stunning Concert
Santa brought for Dale and myself tickets to the Jimmy Buffet concert in the Sydney Opera House 23rd January 2011.
He is a hero of ours and countless others. He has a lifestyle you could only dream of. Boats, Tequila, Planes, Music and FUN. We first saw him at The Mandalay over 20 years ago. There was a crowd of us. You bought a table and as with Jimmy's Concerts, it is obligatory to drink while you watch. I was a Jimmy Novice at that time but by the end of the performance... was in love. What fun, we were all up dancing. A friend of ours a Radio Host who shall remain nameless, was last seen dancing on his chair. A couple of years later, the same Radio Host was with us in New Orleans at the River Tent once again dancing and drinking to Jimmy and his Coral Reef Band. So we have a history with Jimmy.
We met at the Opera Bar with our friends Stu and Yvonne
The fans were gathering
From the moment after the Opening Act finished, she was good,
the promoter Michael Chugg announced Jimmy doesn't want to keep you waiting people. Only a 10 minute break just enough time to refresh your glasses Ladies and Gentlemen.
The Crowd went wild.
Beach balls appeared and were tossed around the concert hall. Don't think the Opera House sees many of these nights!
Around us brightly dressed Parrot heads, (The affectionate name for Jimmy's fans).
Already everyone was ready. Of course Jimmy's philosophy is Party Party Party, Fun Fun Fun and his fans all know about that. of course the average age is up there... as Jimmy says
"I'm growing older but not up
My metabolic rate is pleasantly stuck
Let those winds of time blow over my head
Id rather die while I'm living than live while I'm dead"

Sydney - A Wedding and Fabulous Manly
We have been coming to Sydney regularly, for decades...My first visit 1963 on a cruise ship. In the 70's, we thought it was very smart to stay close to Double Bay, Great shopping...
then we moved to Kings Cross, in the 80's staying at the wonderful trendy Sebel Town house. One of the most fun hotels anywhere. Who remembers the House Bar?
We graduated to Mosman in the 90's, where our friends Debbie and David had a place, right overlooking the Ferry, we loved that, sitting on the balcony watching Sydneysiders going about their business. They moved. But as luck would have it our Friends Yvonne and Stu returned to Sydney and provided our next Hotel, just a bit further up the road, still in Mosman. Lovely, almost on the main road.
This visit, which is for the Wedding of Debbie's daughter Summer, to Christopher, our accommodation, supplied by Erin and Milton is overlooking the water in Manly. This is fantastic. The Ferries come and go every 15 minutes or so and as I write the Australian Navy, well...a little bit of it... is entering the Harbour.
This is a magnificent view
I just adore it.
The wedding was held on Shelly Bay Beach, around the other side of Manly. It's a sheltered Bay, on the Surf side. Just walk a couple of hundred metres and there is the Surf Beach.
Isn't that amazing?
Fantastic.
Just having the best time.
My better half... waiting for the ceremony to start.
The wedding was beautiful. A young couple, looking gorgeous and enormously happy.
Summer was like a little girl, opening her Christmas presents.
Here she comes on David's arm
Let's forget all the tragedies going on around the world, for a short while and embrace happiness and love.
Congratulations... Summer and Chris. A proud moment for all.

The postie came to deliver a registered letter for Milton. She's a goer... it was too hard for me to get out of the security gate, so she walked down to the walkway and I signed for it there.
There she goes, back up the path. Go Postie.
Just keep on walking and there is a beach AND a sea pool. Great fun.
Can't get much better than this.

Fresh Flounder - What a Meal
Jones Bay Whangaroa
Stunning.
We have been given more fresh flounder. Thank you Garry and Sandra.
And excellent cleaning too Ms Sandra.
As this is still a novelty for us on this trip. The only way to cook it is in some olive oil and butter.
First dip the flounder in well seasoned flour
Dust off the excess
Into a hot pan with some olive oil
Cook for about 2-3 minutes until golden brown
Flip add a knob of butter
Another 2-3 minutes is all you need
Baste a couple of times.
Onto the plates
Good squeeze lemon juice and another grind black pepper
Just get into it... don’t forget to suck the bones, they are so succulent and tasty.
I roasted some cubed potatoes and onions with a little olive oil
Sea salt and black pepper. And for good taste a couple sprigs of rosemary.
Food fit for a king.

A Salad Dinner, Handy for Those on Low Carb Eating Plans (but not essential!!!)
This is a repost originally posted in 2006 thought it could do with a revamp.
I didn’t really intend to have a low carb dinner it just happened…
BUT the 3 salads I chose were delicious and filling.
The first 2 antipasti salads were inspired by Mary Ann Esposito of the “Ciao Italia from Various parts of Italy” programmes on Food TV, this particular programme was embracing Southern Italy…apparently the Scapece in particular is always on the antipasti trolley in most restaurants. Mind you I understand why, it was sensational.
But first lets start with the Tuna Salad. It has chick peas in it and I think I had too many for my taste so the quantities below have been adjusted.
This will feed 6. So read on.

Poached Tuna Salad.
This probably sounds like a little dull name but there are so many lovely flavours you will fall asleep trying to read them in the title.
500 gms fresh tuna cut into 2 cms steaks
Poaching liquid water, slosh of wine, 2 heaped tsps chicken stock powder and 3 slices lemon
So gently poach the tuna in the liquid for 5 minutes in covered pan, cool season with a little freshly ground black pepper and flake.
1 can artichoke hearts drained and roughly chopped
1 small can chick peas drained and washed well
1 red onion peeled and thinly sliced
1 med fennel bulb thinly sliced
2 tbs fennel tops chopped
Handful of parsley fine chopped
2 tbs capers
The Marinade
Olive oil
White balsamic vinegar white vinegar will suffice but the balsamic is so nice buy some for your pantry anyway
Squeeze lemon juice
The proportions for the marinade are 2/3 oil to 1/3 vinegar
Sea salt & ground black pepper.
The Garnish
3 eggs hard boiled cut into quarters
Now the easy bit - Combine all the ingredients, add the dressing check for seasoning add a little more salt if needed…it must be well seasoned. Marinate at least 2 hours. You can prepare this earlier in the day but take it out of the fridge at least an hour before serving.
Pretty and tasty.
Now for the Scapece (Marinated Flounder)
This was the hit of the evening it is so simple you must try it.

For quantities I will give the proportions, you can work out how much you need.
1 flounder for 2 people Get your fishmonger to skin and filet the fish...too hard for home cooks
Seasoned flour
Vege oil for frying Rice Bran oil is excellent
First flour the fish and fry quickly till golden,drain
Breadcrumbs...break up a french loaf, toast in oven till dry and whiz up in your food processor. There will be too many but just freeze the excess in little bags. I will be doing other recipes which will incorporate them. Alway use good bread for crumbs.
Now to prepare the Marinade you will need about 200 mls
once again 2/3 oil to 1/3 vinegar
Olive Oil
Red wine vinegar
2 cloves garlic finely chopped
8-10 mint leaves sliced finely
sea salt & black pepper
To assemble
Place cooked filets in shallow dish (Not metal doesn't go well with the vinegar) and cover with breadcrumbs just sprinkle them over. You can stack the fish in layers so you don't have to use a large dish.
Dress each layer with marinade...Voila...done, cover with plastic wrap and refrigerate at least 2 hours, (once again bring out of fridge an hour before serving) room temperature food is so flavourful.
Could this be easier, I don't think so and seriously it was absolutely superb.
Now the meat course.
I can't recall who inspired this dish I suspect Anthony Worrall Thompson on his show on Food TV.
Warm Lamb and Aubergine Salad topped with Cherry Tomatoes

Serve this quite quickly, the lamb can dry out a bit if left to get too cold...all lovely flavours yet again
Quantities once again will be proportional.
You can make this for 2 or for 12, anything is possible.
Lamb steaks trimmed of excess fat chopped into chunks about 1.5 cms
eggplant cut into same size as lamb and porbably the same amount
Marinade for say 400 gms meat
2 tsp cumin
1 clove garlic finely chopped
75 mls of olive oil
Rub well into the meat with your hands
Marinate for at least 30 mins
Heat your roasting pan in a 220◦oven dash with 2-3 tablespoons of oil, Place the meat and eggplant in and pop all into oven for 30 minutes.
Meanwhile make The Dressing.
Olive oil enough to be 2/3 against the lime juice
Juice of 2 limes and 2 tsps lime zest
1 small red onion finely chopped
2tbs each parsley, mint, and basil all chopped
sea salt and freshly ground black pepper
Make sure you have plenty of seasoning in your dressing to lift those flavours.
Just mix them all together and pour over the hot lamb
Sprinkle with a punnet of cherry tomatoes cut in half and serve
The blue dish I used is very pretty and great for large quantities but the photos took on a bit of blue hue so I apologise for this but don't let this put you off.

Kingfish Lodge - in Whangaroa Harbour The Jewel of the North
Last night we went to Kingfish Lodge for drinks and Dinner. It is nestled in a lovely cove in Whangaroa Harbour. 'Just turn left after you have come through the entrance'
What a view. It is only accessible by boat or Helicopter. You can be picked up in the Lodge Water Taxi so this is not an obstacle
We have been there many times and the food is excellent. The Staff are very welcoming
From the moment you enter you know they just want to look after you.
There was going to be a bit of wait for dinner so the Bar menu came out and we ordered some Calamari.
Delicious they were too lightly crumbed with a little Chili sauce plus Tartare on the side. Simple but tasty.
Chef Paul cooks up a real treat. Garry had Crayfish Bisque, the rest of us ate the bread and dips, which came with some succulent smoked Marlin
Garry and Dale ordered the Snapper
Gorgeous Vege for the table, Little Cauliflower Croquettes, Beans and Roasted Cherry Tomatoes
Sandra and I were wooed by the Armenian Poussin with little roast potatoes. Always a sucker for little chickens.
Excellent flavour came served on a sizzling cast iron plate.
Everything was just perfect.
If you're up this way call them and book in. You wont be disappointed.

Whangaroa When The Sun Shines-There is Few Places More Beautiful
Above The Good Ship Margaritaville at 6am on 2nd January
New Years Eve turned out to be a bit of a damp squib, in more ways than one We had a nice time but I think we are getting a bit past mad parties and it was hosing down with rain
Jen and Ian from Infarred came over and we ate and drank.
Lana and Dale got a foot massage from Jen. That was a highlight for them.
So we are becoming a bit boring I think, if that makes your day!!!
But the upside is we didn't have hangovers.
I made Orzo with Roasted Vegetables and Prawns.
I love Orzo, used as a Salad it really absorbs flavours
Very simple The wonderful flavours of fresh roasted summer vege
Just try this so so simple people.
1 carrot peeled and diced
1 yellow courgette diced
1 red onion peeled and diced
1 red pepper diced
Olive oil
Sea salt and freshly ground black pepper
12 prawns
1 lemon juiced and zested
1 1/2 cups Orzo
Fresh chopped basil and parsley
Toss the vege in oil and season well
Roast in a hot oven until almost tender
About 25 minutes
Occasionally toss
Then add prawns
Back into oven for 6 minutes
Remove toss with juice and zest of 1 lemon
Cool to room temperature
Meanwhile cook the orzo to manufacturers specifications
Drain and toss immediately with the vege, prawns and herbs
taste for seasoning and adjust to your taste.
Leave to absorb flavours
Perfect with a light crisp Rose.
Later that day Sandra and Garry from Margaritaville came bearing gifts

dusted is seasoned flour
In butter and oil
Add some fresh chopped parsely
A bit of wine and extra butter, Et voila you have a sauce.
Divine
There was a certain amount of frivolity, nothing like a couple of Margaritas plus fresh fish, plus beautiful sunshine, to end the 1st Day of the year. Roll on 2011
