    Cheese and Onion Scones

    I’m sorry to rabbit on about scones, but I made this version today for lunch to accompany a bowl of soup... and they were divine.
    Dale actually spread butter and beetroot relish on his second one. I just ripped them up with my fingers and devoured as is.

    This was very greedy and we are both about to burst but 4 normal people would be quite satisfied with these proportions

    2 cups self raising flour
    ½ teaspoon salt

    Pinch cayenne pepper

    2 tablespoons finely chopped red onion
    4 large grates of cheddar cheese (about 40 gms

    150 mls cream
    150 mls soda water

    Sift dry ingredients
    Add onion and cheese mix around with your hands
    Throw in wet ingredients
    Mix quickly to a dough
    Pat into a rectangle with you hands about 2 cms thick

    Cut into 4 shapes
    Brush with milk

    Bake 205C fan bake for 20 minutes



    I have broken one in half…look at the crumb so short and light
    Double the quantity and this is how many you get


    When they are cooked wrap them in a teatowel Tom Sawyer/Huckleberry Finn style.
    Pop a big stick through the knot and run away!!! Didn't you always want to do that when you were small?
    But first make this delicious mustard butter to spread on the hot scones.

    125 gms soft butter
    2 tsp Dijon Mustard
    2 tablespoons chopped chives
    Mix together, spread on the scones and devour

    I make garlic scones but haven't branched out to other flavors... Stupid of me as they are so easy - and so good! (I love warm bread with butter...)

    LOL! When I was a kid I always thought the food in the towel and stick seemed so cool too! ; ) The scones look great with or without the stick!
