Just had a couple of nights on board Cajun Moon.
It was beautiful out in the Hauraki Gulf.
Chilly at night, but we have central heating so that's not a problem
Dale really doesn't like meat, so we have as many meatless meals, as I can stand.
I also need to use up the canned food in the larder on the boat.
I love the idea of Jamie Oliver's fish pie, where he grates the potato topping rather than mashed spuds. So I worked on that.
1 kumara (sweet potato) grated
2 tbs olive oil
Salt and Piri Piri seasoning (you can use chili flakes)
1 leek sliced sauted till soft in 1 tbs olive oil
3 eggs hardboiled and large chop
2 tbs butter
10 gms mushrooms chopped
Sea salt and freshly ground black pepper
50 mls white wine
2 tbs flour
1 cup milk
1 can tuna
Saute leeks and set aside, place in gratin dish
Melt butter in pan
Add mushrooms,
Season
Add wine and reduce
Add flour stir cook the flour out for a couple of minutes
Add milk and cook till thickens
Add eggs and tuna to sauce
Mix grated Kumara with olive oil
Season with sea salt and sprinkle with Piri piri seasoning
Place over sauce
Bake at 190C for about 30 minutes
Serve and garnish with chopped parsley
Very tasty.
